Zesty Cheddar and Bacon Funeral Potatoes

Ingredients
4 cups shredded hash brown potatoes
2 cups shredded sharp cheddar cheese
1 cup sour cream
1 can (10.5 oz) cream of chicken soup
1/2 cup chopped green onions
1/4 cup diced jalapeños
1 cup cooked and crumbled bacon
1/2 cup melted butter
2 cups crushed cornflakes
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Instructions
1. Preheat your oven to 350°F (175°C).
2. In a large bowl, combine the shredded hash brown potatoes, cheddar cheese, sour cream, cream of chicken soup, chopped green onions, and diced jalapeños.
3. Stir in the crumbled bacon, garlic powder, onion powder, salt, and pepper, mixing until all ingredients are well incorporated.
4. Spread the mixture evenly into a greased 9x13-inch baking dish.
5. In a separate bowl, mix the melted butter with the crushed cornflakes until coated evenly.
6. Sprinkle the cornflake mixture over the top of the potato mixture in the baking dish.
7. Bake in the preheated oven for 45 minutes, or until the top is golden brown and bubbly.
8. Remove from oven and allow to cool slightly before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Preheat the oven to 350°F (175°C), cover the dish with foil, and reheat for 20 minutes or until heated through.
