Zesty Broccoli Cheese Rice Casserole

Ingredients
1 cup long-grain white rice
2 cups broccoli florets
1 cup shredded sharp cheddar cheese
1 can (10.5 oz) cream of mushroom soup
1/2 cup sour cream
1/4 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1/2 tsp paprika
1/4 tsp cayenne pepper
2 tbsp olive oil
Salt and pepper to taste
1/4 cup grated Parmesan cheese
Instructions
1. Cook the rice according to package instructions and set aside.
2. Preheat the oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.
3. In a large skillet, heat olive oil over medium heat and sauté onion and garlic until translucent, about 3 minutes.
4. Add in broccoli florets and cook for another 5 minutes, until broccoli is just tender.
5. In a large bowl, combine cooked rice, sautéed vegetables, shredded cheddar cheese, cream of mushroom soup, sour cream, milk, paprika, cayenne pepper, salt, and pepper. Mix until well blended.
6. Transfer the mixture to the prepared baking dish and spread evenly.
7. Sprinkle grated Parmesan cheese over the top.
8. Bake in the preheated oven for 25-30 minutes, until the top is golden brown and bubbly.
9. Let cool for 5 minutes before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place individual portions in the microwave for 1-2 minutes or until heated through.
