Traditional Italian Focaccia

Ingredients

4 cups all-purpose flour
1 tsp salt
1 packet (2 1/4 tsp) active dry yeast
1 1/2 cups warm water (110°F)
1/4 cup olive oil
2 tsp sugar
1 tbsp coarse sea salt
2 tbsp fresh rosemary, chopped
1/4 cup olive oil for topping

Instructions

Step 1: In a small bowl, dissolve sugar and yeast in warm water. Let stand until foamy, about 5 minutes.
Step 2: In a large bowl, combine flour and salt. Mix in the yeast mixture and 1/4 cup olive oil until dough forms.
Step 3: Knead the dough on a lightly floured surface until smooth and elastic, about 8-10 minutes.
Step 4: Place dough in a greased bowl, cover with a damp cloth, and let rise in a warm place until doubled in size, about 1 hour.
Step 5: Preheat oven to 475°F (245°C).
Step 6: Punch down the dough and transfer to a greased baking sheet. Flatten into a rectangle about 1/2 inch thick.
Step 7: Dimple the surface with your fingers, drizzle with olive oil, and sprinkle with rosemary and coarse sea salt.
Step 8: Bake in preheated oven for 15-20 minutes or until golden brown.
Step 9: Let cool slightly before serving.

Storage

Store focaccia in an airtight container at room temperature for up to 2 days.

Reheating

To reheat, wrap in foil and warm in a 350°F oven for 10 minutes.
