Ingredients

1 lb ground turkey
1 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
1 bell pepper, diced
1 jalapeño, seeded and chopped
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) corn kernels, drained
2 cans (14.5 oz each) diced tomatoes
1 can (4 oz) diced green chilies
2 cups chicken broth
1 tbsp chili powder
1 tsp cumin
1 tsp paprika
Salt and pepper, to taste
1/2 cup shredded cheddar cheese
1/4 cup chopped cilantro
1 lime, cut into wedges
Tortilla strips for garnish

Instructions

1. Heat olive oil in a large pot over medium heat. Add ground turkey and cook until browned.
2. Stir in onion, garlic, bell pepper, and jalapeño; sauté until vegetables are tender.
3. Add black beans, corn, diced tomatoes, green chilies, and chicken broth to the pot.
4. Season with chili powder, cumin, paprika, salt, and pepper. Stir to combine.
5. Bring to a simmer and cook for 20 minutes, allowing flavors to meld.
6. Serve hot, garnished with cheddar cheese, cilantro, lime wedges, and tortilla strips.

Storage

Allow soup to cool completely, then store in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.

Reheating
