Ingredients

1 medium butternut squash
2 tbsp olive oil
2 tbsp maple syrup
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/2 tsp salt
1/4 tsp black pepper
1/4 cup chopped pecans
1 tbsp fresh thyme leaves

Instructions

1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Peel and cube the butternut squash into 1-inch pieces and place them in a large mixing bowl.
3. In a small bowl, whisk together the olive oil, maple syrup, cinnamon, nutmeg, ginger, salt, and black pepper.
4. Pour the maple syrup mixture over the squash cubes and toss until evenly coated.
5. Spread the coated squash on the prepared baking sheet in a single layer.
6. Roast in the oven for 25-30 minutes, stirring halfway through, until tender and caramelized.
7. Remove from the oven and sprinkle with chopped pecans and fresh thyme leaves.
