Smoky Chipotle Black Bean Chili

Ingredients
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
2 chipotle peppers in adobo sauce, chopped
2 cans (15 oz each) black beans, drained and rinsed
1 can (15 oz) diced tomatoes
1 cup vegetable broth
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp ground coriander
Salt and pepper to taste
1 lime, juiced
1/4 cup fresh cilantro, chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and sauté until translucent, about 5 minutes.
3. Stir in minced garlic and chipotle peppers, cooking for another 2 minutes.
4. Add black beans, diced tomatoes, vegetable broth, ground cumin, smoked paprika, and ground coriander.
5. Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes, stirring occasionally.
6. Season with salt and pepper to taste.
7. Before serving, stir in lime juice and garnish with fresh cilantro.
Storage
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat on the stovetop over medium heat, stirring occasionally, until warmed through. Alternatively, microwave in a microwave-safe dish for 2-3 minutes.
