Ingredients
2 large cucumbers, peeled and thinly sliced
2 ripe avocados, diced
1/2 cup plain Greek yogurt
2 tablespoons lime juice
1 tablespoon fresh dill, chopped
1/4 cup red onion, thinly sliced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Instructions
1. In a large bowl, combine the sliced cucumbers and diced avocados.
2. In a small bowl, mix Greek yogurt, lime juice, chopped dill, salt, and pepper until smooth.
3. Pour the yogurt dressing over the cucumber and avocado mixture and gently toss to coat evenly.
4. Add sliced red onion to the salad and drizzle with olive oil.
5. Chill in the refrigerator for at least 15 minutes before serving.
Storage
Store in an airtight container in the refrigerator for up to 2 days.
