Savory Spiced Fried Cabbage

Ingredients
1 medium green cabbage
2 tbsp olive oil
1 tsp cumin seeds
1 tsp mustard seeds
1 medium onion, thinly sliced
2 cloves garlic, minced
1 tsp smoked paprika
1/2 tsp turmeric powder
1/4 tsp cayenne pepper (optional)
1 tbsp maple syrup
Salt to taste
Black pepper to taste
Instructions
1. Core and thinly slice the cabbage.
2. Heat olive oil in a large skillet over medium heat.
3. Add cumin seeds and mustard seeds and sauté until they begin to pop.
4. Add sliced onion and cook until translucent, about 5 minutes.
5. Stir in minced garlic, smoked paprika, turmeric, and cayenne pepper.
6. Add the sliced cabbage to the pan, stirring well to coat with spices.
7. Drizzle maple syrup over the cabbage and season with salt and black pepper.
8. Cook for an additional 10-15 minutes, stirring occasionally, until cabbage is tender and slightly caramelized.
