Rustic Roasted Tomato & Herb Sauce

Ingredients
3 lbs ripe tomatoes
1/4 cup olive oil
1 tsp salt
1/2 tsp black pepper
1 tbsp sugar
1/2 cup fresh basil, chopped
1/4 cup fresh oregano, chopped
6 cloves garlic, minced
1 medium onion, chopped
1/4 cup balsamic vinegar
1/2 tsp red pepper flakes
Instructions
1. Preheat oven to 400°F (200°C).
2. Cut tomatoes into halves and arrange on a baking sheet.
3. Drizzle with olive oil, sprinkle with salt, pepper, and sugar.
4. Roast in the oven for 25-30 minutes until soft and slightly caramelized.
5. In a large pot, heat olive oil over medium heat.
6. Sauté onion for 5 minutes until translucent.
7. Add garlic and sauté for another 1-2 minutes.
8. Add roasted tomatoes, and crush them with a wooden spoon.
9. Stir in balsamic vinegar, red pepper flakes, basil, and oregano.
10. Simmer for 15-20 minutes, stirring occasionally.
11. Allow sauce to cool slightly, then blend to desired consistency.
12. Adjust seasoning to taste with salt and pepper.
Storage
Store in an airtight container in the refrigerator for up to 5 days.
Reheating
Reheat gently on the stovetop over low heat, stirring occasionally.
