Ingredients

2 lbs sweet potatoes
1/2 cup maple syrup
1/2 cup sugar
1/2 cup unsalted butter, melted
2 large eggs
1/2 cup heavy cream
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp salt
1 unbaked pie crust (9-inch)

Instructions

1. Preheat the oven to 400°F (200°C).
2. Roast sweet potatoes on a baking sheet for 45-50 minutes until tender.
3. Allow sweet potatoes to cool slightly, then peel and mash them in a large bowl.
4. Reduce oven temperature to 350°F (175°C).
5. Add maple syrup, sugar, melted butter, eggs, heavy cream, vanilla, cinnamon, nutmeg, ginger, and salt to the mashed sweet potatoes. Mix until smooth.
6. Pour the mixture into the unbaked pie crust.
7. Bake for 50-60 minutes until the filling is set and a knife inserted in the center comes out clean.
8. Cool on a wire rack before serving.

Storage

Store in the refrigerator for up to 4 days, covering with plastic wrap or aluminum foil.

Reheating

Reheat individual slices in the microwave for 20-30 seconds or until warm. Alternatively, reheat the entire pie in the oven at 300°F (150°C) for 15 minutes.
