Lentil Soup

Ingredients
1 cup dried lentils
1 tablespoon olive oil
1 medium onion, chopped
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon dried thyme
1 can (14.5 ounces) diced tomatoes
4 cups vegetable stock
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon lemon juice
2 tablespoons fresh parsley, chopped
Instructions
1. Rinse and drain lentils.
2. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, sauté until softened, about 5 minutes.
3. Stir in garlic, cumin, and thyme, cook for 1 minute.
4. Add diced tomatoes with their juice, vegetable stock, and lentils. Season with salt and pepper.
5. Bring to a boil, then reduce heat and simmer for 20 minutes, until lentils are tender.
6. Stir in lemon juice and adjust seasoning if needed.
7. Ladle into bowls and garnish with fresh parsley before serving.
Storage
Store in an airtight container in the refrigerator for up to 5 days.
Reheating
Reheat on the stove over medium heat until warmed through, or microwave for 2-3 minutes, stirring halfway.
