Herb-Infused Garlic Roasted Potatoes

Ingredients

2 lbs baby potatoes
4 cloves garlic, minced
3 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1/2 lemon, juiced
1 tbsp parsley, chopped

Instructions

1. Preheat the oven to 425°F (220°C).
2. Wash and dry the potatoes, then cut them in half.
3. In a large bowl, combine the olive oil, minced garlic, salt, black pepper, rosemary, and thyme.
4. Add the potatoes to the bowl and toss to coat them evenly with the herb mixture.
5. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
6. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until golden and tender.
7. Remove from the oven and drizzle with lemon juice.
8. Garnish with chopped parsley before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes until heated through.
