Ingredients
2 medium summer squash, sliced into 1/4-inch rounds
1/4 cup olive oil
1 tablespoon fresh thyme leaves
1 tablespoon fresh rosemary, chopped
1 lemon, zested
2 cloves garlic, minced
Salt and pepper to taste
1/2 cup grated Parmesan cheese (optional)
Instructions
1. Preheat the oven to 375°F and lightly grease a baking dish.
2. In a large bowl, combine olive oil, thyme, rosemary, lemon zest, garlic, salt, and pepper.
3. Add the sliced summer squash to the bowl and toss to coat evenly with the herb mixture.
4. Arrange the squash slices in a single layer in the prepared baking dish.
