Hearty Vegetable Beef Soup

Ingredients
1.5 lbs beef stew meat
1 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
4 cups beef broth
2 cups water
1 can (14.5 oz) diced tomatoes
2 carrots, sliced
2 ribs celery, sliced
2 potatoes, diced
1 cup green beans, trimmed and chopped
1 cup corn kernels
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried basil
Salt and pepper to taste
Instructions
1. In a large pot, heat olive oil over medium-high heat. Add beef stew meat and brown on all sides.
2. Remove beef and set aside. In the same pot, add onion and garlic, sautéing until softened.
3. Return beef to the pot. Add beef broth, water, and diced tomatoes. Bring to a boil.
4. Reduce heat, cover, and simmer for 30 minutes.
5. Stir in carrots, celery, potatoes, green beans, and corn. Add Worcestershire sauce, thyme, and basil.
6. Simmer for an additional 30 minutes or until vegetables and beef are tender.
7. Season with salt and pepper to taste before serving.
Storage
Store soup in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat soup on the stovetop over medium-low heat until warmed through, or microwave in a microwave-safe container until steaming hot.
