Ingredients
2 packs instant ramen noodles (discard seasoning)
1 cup shredded red cabbage
1 cup shredded carrots
1/2 cup edamame beans, shelled
1 orange, peeled and segmented
1/4 cup toasted sliced almonds
2 green onions, thinly sliced
1/4 cup fresh cilantro, chopped
1/4 cup rice vinegar
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp honey
1 tbsp fresh ginger, grated
1 lime, juiced
1 garlic clove, minced
1/4 tsp red pepper flakes
Instructions
1. Cook the ramen noodles according to package instructions, then drain and rinse under cold water.
2. In a large bowl, combine the red cabbage, carrots, edamame, orange segments, almonds, green onions, and cilantro.
3. In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, ginger, lime juice, garlic, and red pepper flakes to make the dressing.
4. Add the cooked noodles to the vegetable mixture.
5. Pour the dressing over the salad and toss until everything is well coated.
6. Serve immediately or chill in the refrigerator for 20 minutes for enhanced flavor.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, allow the salad to come to room temperature or warm slightly in a microwave-safe dish for 30 seconds, if desired.
