Cajun Spiced Shrimp Tacos

Ingredients
1 lb large shrimp, peeled and deveined
2 tbsp olive oil
2 tbsp Cajun seasoning
8 small corn tortillas
1 cup shredded red cabbage
1 avocado, sliced
1/4 cup chopped cilantro
1 lime, cut into wedges
Salt, to taste
Pepper, to taste
Instructions
1. In a medium bowl, toss shrimp with olive oil and Cajun seasoning until evenly coated.
2. Heat a large skillet over medium-high heat and add the shrimp. Cook for 2-3 minutes on each side until pink and opaque.
3. Warm the corn tortillas in a dry skillet or microwave.
4. Assemble the tacos by placing shredded cabbage on the tortillas, followed by the cooked shrimp, avocado slices, and a sprinkle of cilantro.
5. Serve with lime wedges on the side for squeezing over the tacos.
Storage
Store leftover shrimp and toppings separately in airtight containers in the refrigerator for up to 2 days.
Reheating
Reheat shrimp in a skillet over medium heat until warmed through, or microwave for 1-2 minutes on medium power.
