BBQ Tofu Sliders

Ingredients

1 lb extra-firm tofu, drained and pressed
1 cup BBQ sauce
2 tablespoons olive oil
1 tablespoon soy sauce
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
12 slider buns
2 cups coleslaw mix
1/2 cup mayonnaise
1 tablespoon apple cider vinegar
Salt and pepper to taste

Instructions

1. Slice the tofu into 1/2-inch thick slabs and marinate in BBQ sauce for at least 30 minutes.
2. In a small bowl, whisk together soy sauce, smoked paprika, and garlic powder.
3. Heat olive oil in a non-stick skillet over medium-high heat.
4. Add tofu slabs and cook for 3-4 minutes on each side until crispy and golden.
5. In a separate bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, salt, and pepper. Toss well to coat.
6. Toast slider buns lightly on each side in the skillet.
7. Assemble sliders by placing a tofu slab on each bun, topping with coleslaw, and finishing with the top bun.

Storage

Store leftover tofu and coleslaw in separate airtight containers in the refrigerator for up to 3 days.

Reheating

Reheat the tofu in a non-stick skillet over medium heat until warmed through, or in a preheated oven at 350°F for 10 minutes.
