Baked Brie with Cranberry Sauce

Ingredients
1 wheel of Brie cheese (about 8 oz)
1 sheet of puff pastry, thawed
1 cup fresh cranberries
1/2 cup granulated sugar
1/2 cup water
1/4 cup chopped pecans
1 egg, beaten
1 tbsp flour for dusting
Crackers or sliced baguette for serving
Instructions
1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a small saucepan over medium heat, combine the cranberries, sugar, and water. Cook until the cranberries have burst and the mixture thickens, about 10 minutes. Allow to cool slightly.
3. Roll out the puff pastry on a lightly floured surface to ensure it’s large enough to fully wrap around the Brie.
4. Place the Brie in the center of the pastry. Spoon the cranberry sauce over the top of the Brie, followed by the chopped pecans.
5. Fold the pastry over the Brie, pleating as you go. Brush the beaten egg over the pastry to ensure a golden finish.
6. Transfer the wrapped Brie to the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown.
7. Let it cool for a few minutes before serving with crackers or sliced baguette.
Storage
Store any leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently in the oven at 300°F until the Brie is warm and the pastry is crisp.
