Zucchini Fries

Ingredients
2 large zucchinis
1 cup all-purpose flour
2 teaspoons garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
Cooking spray
Instructions
1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Cut the zucchinis into sticks, about 3 inches long and 1/2 inch thick.
3. In a shallow bowl, mix flour, garlic powder, onion powder, salt, and pepper.
4. In another bowl, beat the eggs.
5. In a third bowl, combine panko breadcrumbs and Parmesan cheese.
6. Dredge each zucchini stick in the flour mixture, then dip in the beaten eggs, and finally coat with the breadcrumb mixture.
7. Place the coated zucchini sticks on the prepared baking sheet and spray lightly with cooking spray.
8. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
9. Serve immediately with your favorite dipping sauce.
Storage
Store any leftover zucchini fries in an airtight container in the refrigerator for up to 2 days.
Reheating
Reheat the zucchini fries in a preheated oven at 375°F for 5-7 minutes or until heated through and crispy again.
