Ingredients
2 medium zucchinis
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 clove garlic, minced
1/4 cup grated Parmesan cheese
Instructions
1. Preheat your oven to 400°F (200°C).
2. Slice the zucchinis into 1/4 inch thick rounds.
3. In a large bowl, toss zucchini slices with olive oil, salt, pepper, and minced garlic until evenly coated.
4. Arrange the zucchini slices in a single layer on a baking sheet lined with parchment paper.
5. Bake in the preheated oven for 15 minutes or until tender.
6. Remove from the oven and sprinkle with Parmesan cheese.
7. Return to the oven and bake for an additional 5 minutes or until the cheese is melted and golden brown.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place in a preheated oven at 350°F (175°C) for 5-7 minutes or until warm.
