Ingredients

2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
1 pound boneless skinless chicken breasts, cubed
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 (15-ounce) cans white beans, drained and rinsed
1 (4-ounce) can diced green chilies
4 cups chicken broth
1 tablespoon lime juice
1/4 cup fresh cilantro, chopped
1 avocado, diced (optional)
Salt and pepper to taste

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and minced garlic, sauté until translucent.
3. Stir in cubed chicken, cooking until browned.
4. Mix in cumin, chili powder, smoked paprika, salt, and pepper, coating the chicken evenly.
5. Add white beans, green chilies, and chicken broth, bringing to a simmer.
6. Reduce heat, cover, and simmer for 20 minutes.
7. Stir in lime juice and fresh cilantro.
8. Adjust seasoning with salt and pepper as needed.
9. Serve hot, garnished with diced avocado, if desired.

Storage
