Zesty Taco Rice Casserole

A vibrant and hearty taco rice casserole that blends Mexican seasonings with cheesy goodness—a perfect meal for any weeknight dinner.

Ingredients

1 lb ground beef
1 1/2 cups cooked white rice
1 packet (1 oz) taco seasoning
1 can (10 oz) diced tomatoes with green chilies, drained
1 can (15 oz) black beans, rinsed and drained
1 cup corn kernels, canned or frozen
2 cups shredded cheddar cheese
1/4 cup chopped fresh cilantro
Salt and pepper to taste
1 tbsp olive oil

Instructions

1. Preheat oven to 375°F (190°C).
2. In a large skillet over medium heat, add olive oil and cook ground beef until browned. Drain excess fat.
3. Stir in taco seasoning, diced tomatoes, black beans, and corn. Cook for another 5 minutes.
4. Combine cooked rice with the beef mixture, stirring well to integrate all ingredients.
5. Spread half of the mixture into a greased 9x13-inch baking dish and sprinkle with 1 cup of cheese.
6. Add the remaining beef and rice mixture on top and cover with the rest of the cheese.
7. Bake for 20-25 minutes or until the cheese is melted and bubbly.
8. Garnish with chopped fresh cilantro before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F (175°C) for 15-20 minutes or until heated through.
