Zesty Spinach Artichoke Dip

Ingredients

1 tbsp olive oil
1 cup chopped onion
3 cloves garlic, minced
10 oz fresh spinach, chopped
14 oz canned artichoke hearts, drained and chopped
8 oz cream cheese, softened
1/2 cup sour cream
1/2 cup mayonnaise
1 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1 tbsp lemon juice
1 tsp red pepper flakes
Salt and pepper to taste

Instructions

1. Preheat oven to 350°F (175°C).
2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until onions are translucent.
3. Stir in chopped spinach and artichoke hearts, cook until spinach is wilted.
4. In a large mixing bowl, combine cream cheese, sour cream, mayonnaise, and lemon juice.
5. Add the sautéed vegetables to the bowl, along with Parmesan and mozzarella cheeses. Mix thoroughly.
6. Add red pepper flakes, and season with salt and pepper to taste.
7. Transfer the mixture to a baking dish, spreading evenly.
8. Bake for 25-30 minutes, until the top is golden and bubbly.
9. Serve warm with crackers or bread.

Storage

Store leftover dip in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a microwave-safe dish on medium heat for 2-3 minutes, stirring halfway through.
