Zesty Quinoa Pasta Salad

This vibrant and refreshing Zesty Quinoa Pasta Salad combines the nutty flavor of quinoa with the tanginess of lemon and the crunch of fresh vegetables, making it a perfect summer dish.

Ingredients

1 cup quinoa
8 oz rotini pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red bell pepper, diced
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup Kalamata olives, sliced
1/4 cup feta cheese, crumbled
1/4 cup extra virgin olive oil
1/4 cup lemon juice
1 tsp lemon zest
1 tsp salt
1/2 tsp black pepper

Instructions

1. Cook quinoa according to package instructions and let it cool.
2. Cook pasta in salted boiling water until al dente, then drain and cool.
3. In a large bowl, combine quinoa, pasta, cherry tomatoes, cucumber, red bell pepper, red onion, parsley, olives, and feta cheese.
4. In a small bowl, whisk together olive oil, lemon juice, lemon zest, salt, and pepper.
5. Pour the dressing over the salad and toss until everything is well coated.
6. Chill in the refrigerator for at least 30 minutes before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Best served cold, does not require reheating.
