Zesty Quinoa Enchiladas

Ingredients

1 cup quinoa, rinsed and drained
2 cups water
1 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 zucchini, diced
1 cup corn kernels
1 can (15 oz) black beans, drained and rinsed
1 tsp cumin
1 tsp chili powder
Salt and pepper to taste
8 corn tortillas
2 cups salsa verde
1 cup shredded Monterey Jack cheese
1/4 cup chopped fresh cilantro, for garnish

Instructions

1. Preheat your oven to 375°F (190°C).
2. In a medium pot, bring quinoa and water to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked.
3. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
4. Stir in bell pepper, zucchini, and corn, cook until vegetables are tender.
5. Add cooked quinoa, black beans, cumin, chili powder, salt, and pepper. Mix well.
6. Spread a thin layer of salsa verde on the bottom of a 9x13 inch baking dish.
7. Warm tortillas in the microwave for 30 seconds to make them pliable.
8. Place a scoop of the quinoa mixture onto each tortilla, roll up, and place seam-side down in the dish.
9. Pour remaining salsa verde over enchiladas, sprinkle with cheese.
10. Bake uncovered for 20-25 minutes until cheese is bubbly and golden.
11. Garnish with fresh cilantro and serve warm.

Storage

Store leftover enchiladas in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the microwave on high for 2-3 minutes or until heated through.
