Ingredients
2 lbs sweet potatoes
2 tbsp olive oil
1 tsp chili powder
1/2 tsp ground cumin
1/2 tsp smoked paprika
1/4 tsp cayenne pepper
1 lime, zested and juiced
1 tsp kosher salt
1/2 tsp black pepper
2 tbsp fresh cilantro, chopped
Instructions
1. Preheat oven to 425°F (218°C).
2. Peel and cube the sweet potatoes into 1-inch pieces.
3. In a large bowl, combine olive oil, chili powder, cumin, smoked paprika, cayenne pepper, lime zest, salt, and black pepper.
4. Toss the sweet potatoes in the spice mix until evenly coated.
5. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
6. Roast for 25-30 minutes, flipping halfway through, until golden and tender.
7. Remove from oven and drizzle with lime juice.
8. Garnish with chopped cilantro before serving.
Storage
Store leftover sweet potatoes in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place sweet potatoes on a baking sheet and warm in a preheated oven at 350°F (175°C) for 10 minutes, or until heated through.
