Zesty Orange Ginger Stir Fry

Ingredients
1 lb chicken breast, sliced thin
2 cups broccoli florets
1 red bell pepper, sliced
1 cup snap peas
1 carrot, julienned
3 cloves garlic, minced
1 tbsp fresh ginger, grated
1/2 cup freshly squeezed orange juice
2 tbsp soy sauce
1 tbsp honey
1 tbsp cornstarch
2 tbsp vegetable oil
1 tbsp sesame oil
Salt and pepper to taste
1 tbsp sesame seeds
1/4 cup chopped green onions
Instructions
1. In a bowl, mix together orange juice, soy sauce, honey, and cornstarch until smooth.
2. Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove and set aside.
3. In the same skillet, add sesame oil and sauté garlic and ginger for about 30 seconds until fragrant.
4. Add broccoli, red bell pepper, snap peas, and carrot. Stir fry for 3-4 minutes until vegetables are tender-crisp.
5. Return chicken to the skillet, pour in the orange sauce, and toss everything to coat evenly. Cook for another 2-3 minutes until sauce thickens.
6. Season with salt and pepper to taste, sprinkle with sesame seeds and green onions before serving.
Storage
Allow to cool completely, then transfer to an airtight container and refrigerate for up to 3 days.
Reheating
Reheat in a skillet over medium heat until warmed through, or microwave on high for 2-3 minutes, stirring halfway.
