Ingredients
8 oz fusilli pasta
1 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, thinly sliced
1/2 cup Kalamata olives, pitted and halved
1/2 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
1/4 cup extra virgin olive oil
2 tbsp lemon juice
1 tsp lemon zest
1 clove garlic, minced
1/2 tsp dried oregano
Salt and pepper to taste
Instructions
1. Cook pasta according to package instructions; drain and rinse under cold water.
2. In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
3. In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
4. Pour the dressing over the pasta salad and toss to coat evenly.
5. Garnish with fresh parsley and serve chilled.
Storage
