Zesty Mediterranean Macaroni Salad

Ingredients

2 cups elbow macaroni
1/2 cup sun-dried tomatoes
1 cup cucumber, diced
1/2 cup Kalamata olives, pitted and sliced
1/4 cup red onion, finely chopped
1/2 cup crumbled feta cheese
1/4 cup fresh parsley, chopped
1/4 cup extra virgin olive oil
2 tbsp red wine vinegar
1 clove garlic, minced
Salt and freshly ground black pepper to taste

Instructions

1. Cook the macaroni according to package instructions, drain, and rinse under cold water.
2. In a large bowl, combine the cooked macaroni, sun-dried tomatoes, cucumber, olives, red onion, and feta cheese.
3. In a small bowl, whisk together olive oil, red wine vinegar, garlic, salt, and pepper.
4. Pour the dressing over the macaroni mixture and toss gently to combine.
5. Stir in the fresh parsley and adjust seasoning as needed.
6. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Serve chilled directly from the refrigerator. Do not reheat.
