Ingredients

1 lb boneless chicken thighs, cut into strips
2 tbsp lime juice
1 tbsp sesame oil
1 tbsp soy sauce
1 tbsp honey
2 cloves garlic, minced
1 inch ginger, grated
1 red bell pepper, sliced
1 cup broccoli florets
1 cup sugar snap peas
1 small carrot, julienned
2 tbsp sesame seeds
2 green onions, chopped
2 tbsp vegetable oil
Salt and pepper to taste

Instructions

1. In a bowl, mix lime juice, sesame oil, soy sauce, honey, garlic, and ginger.
2. Marinate chicken strips in the mixture for 15 minutes.
3. Heat vegetable oil in a large skillet or wok over medium-high heat.
4. Add chicken and cook until golden brown, about 5 minutes.
5. Add red bell pepper, broccoli, sugar snap peas, and carrot to the skillet.
6. Stir fry for 4-5 minutes until vegetables are tender-crisp.
7. Sprinkle sesame seeds and green onions over the stir fry.
8. Season with salt and pepper to taste.
9. Serve hot and enjoy.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat until thoroughly heated, or microwave on medium power for 2-3 minutes.
