Zesty Lemon Paprika Chicken

Ingredients

2 lbs chicken thighs
1 large onion, thinly sliced
2 cloves garlic, minced
3 tbsp olive oil
2 tbsp smoked paprika
1 tsp lemon zest
1 cup chicken broth
1/2 cup sour cream
Salt and pepper to taste
2 tbsp fresh parsley, chopped
1 lemon, cut into wedges for serving

Instructions

1. Heat olive oil in a large skillet over medium-high heat.
2. Add onion and garlic, sauté until onion is translucent.
3. Stir in smoked paprika and lemon zest, cooking for an additional minute.
4. Add chicken thighs, season with salt and pepper, and brown on both sides.
5. Pour in chicken broth, reduce heat to low, and cover.
6. Simmer for 30 minutes or until chicken is fully cooked.
7. Remove chicken, stir sour cream into the sauce, then return chicken to the skillet to coat.
8. Garnish with fresh parsley and serve with lemon wedges.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently in a skillet over low heat until warmed through.
