Ingredients

2 medium zucchinis
1/4 cup all-purpose flour
1/4 cup grated Parmesan cheese
2 large eggs
1 teaspoon lemon zest
1 tablespoon fresh dill, chopped
1 tablespoon fresh mint, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil for frying

Instructions

1. Grate the zucchinis using a box grater and place them in a clean kitchen towel.
2. Squeeze out as much moisture as possible from the grated zucchini and transfer to a large mixing bowl.
3. Add flour, Parmesan cheese, eggs, lemon zest, dill, mint, salt, and pepper to the bowl. Mix well until combined.
4. Heat olive oil in a large skillet over medium heat.
5. Scoop 2 tablespoons of the mixture for each fritter into the skillet, flattening them slightly with a spatula.
6. Cook the fritters for about 3-4 minutes on each side until golden brown and crispy.
7. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
8. Serve warm with your choice of dipping sauce.
