Zesty Lemon Herb Grilled Chicken

Ingredients

4 boneless, skinless chicken breasts
1/4 cup olive oil
1/4 cup lemon juice
1 tablespoon lemon zest
3 cloves garlic, minced
1 tablespoon fresh thyme leaves
1 tablespoon fresh rosemary, chopped
1 teaspoon salt
1/2 teaspoon black pepper

Instructions

1. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
2. Place chicken breasts in a resealable plastic bag and pour marinade over them.
3. Seal the bag and refrigerate for at least 30 minutes to 2 hours, allowing flavors to infuse.
4. Preheat grill to medium-high heat.
5. Remove chicken from marinade and grill for 6-7 minutes per side, or until juices run clear and the internal temperature reaches 165°F.
6. Remove chicken from grill and let rest for 5 minutes before serving.

Storage

Store leftover grilled chicken in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F for 10-15 minutes or until heated through.
