Ingredients
4 boneless skinless chicken breasts
1 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
2 teaspoons lemon zest
1 tablespoon dried Italian herbs (oregano, basil, thyme)
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1 cup marinara sauce
1/2 cup shredded mozzarella cheese
2 tablespoons olive oil
1 lemon, cut into wedges
Fresh basil leaves for garnish
Instructions
1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Pound the chicken breasts to an even thickness and season with salt and pepper.
3. Prepare three bowls: one with flour, one with beaten eggs, and one with panko, Parmesan, lemon zest, Italian herbs, garlic powder, salt, and pepper.
4. Dredge each chicken breast in flour, then dip in egg, and coat with the panko mixture.
5. Heat olive oil in a skillet over medium-high heat and brown the chicken on both sides, about 3 minutes per side.
6. Transfer the chicken to the prepared baking sheet and bake for 20 minutes.
7. Remove from oven, spoon marinara sauce over each breast, and sprinkle with mozzarella cheese.
8. Return to oven and bake for an additional 10 minutes until the cheese is melted and bubbly.
9. Garnish with fresh basil leaves and serve with lemon wedges.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F for 10-15 minutes or until heated through.
