Zesty Lemon Dill Pickled Asparagus

An innovative twist on classic pickled asparagus, this recipe combines fresh asparagus spears with zesty lemon and aromatic dill for an irresistible appetizer or side dish.

Ingredients

2 lbs asparagus, trimmed
2 cups white vinegar
1 cup water
1/2 cup fresh lemon juice
1/4 cup kosher salt
4 cloves garlic, sliced
1 tbsp sugar
1 tsp black peppercorns
1 tsp mustard seeds
1/2 tsp red pepper flakes
3 sprigs fresh dill

Instructions

1. Sterilize jars and lids by boiling them in water for 10 minutes.
2. In a large pot, combine vinegar, water, lemon juice, kosher salt, sugar, black peppercorns, mustard seeds, and red pepper flakes. Bring to a boil over medium heat.
3. Pack asparagus, garlic slices, and dill sprigs tightly into sterilized jars.
4. Pour hot vinegar mixture over the asparagus, leaving 1/2 inch headspace at the top.
5. Wipe rims, apply lids, and process in a boiling water bath for 10 minutes.
6. Allow jars to cool for 24 hours. Store in a cool, dark place for at least 2 weeks to develop flavors.

Storage

Store unopened jars in a cool, dark place for up to 1 year. Once opened, keep refrigerated and consume within 1 month.
