Zesty Lemon Chicken Pasta

Ingredients

1 lb chicken breast, diced
8 oz spaghetti
2 tbsp olive oil
1 lemon, juiced and zested
3 cloves garlic, minced
1/2 cup Parmesan cheese, grated
1/4 cup fresh parsley, chopped
Salt and pepper to taste
1/2 cup chicken broth
1/4 cup heavy cream

Instructions

1. Cook spaghetti according to package instructions until al dente.
2. In a large skillet, heat olive oil over medium heat.
3. Add diced chicken and cook until browned and cooked through, about 6-7 minutes.
4. Remove chicken from the skillet and set aside.
5. In the same skillet, add garlic and cook for 1 minute.
6. Add lemon juice, lemon zest, and chicken broth. Let it simmer for 2-3 minutes.
7. Stir in heavy cream and bring to a gentle simmer.
8. Return chicken to the skillet and coat with the sauce.
9. Add cooked spaghetti, Parmesan cheese, and parsley. Toss well to combine.
10. Season with salt and pepper to taste and serve immediately.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently in a skillet over medium heat, adding a splash of chicken broth if needed to loosen the sauce.
