Zesty Lemon Basil Stir Fry

Ingredients
1 lb chicken breast, sliced thin
1 tbsp olive oil
1 cup broccoli florets
1 red bell pepper, sliced
2 cloves garlic, minced
1 tbsp fresh ginger, grated
2 tbsp lemon juice
1 tbsp soy sauce
1/4 cup fresh basil leaves
1 tsp lemon zest
Salt and pepper to taste
Instructions
1. Heat olive oil in a large skillet over medium-high heat.
2. Add sliced chicken breast to the skillet, cooking until golden brown on both sides, about 5 minutes each side.
3. Remove chicken from the skillet and set aside.
4. In the same skillet, add broccoli, bell pepper, garlic, and ginger. Stir fry until vegetables are tender-crisp, about 4 minutes.
5. Return chicken to the skillet.
6. Add lemon juice, soy sauce, and lemon zest. Stir well to coat the chicken and vegetables.
7. Add basil leaves and stir until just wilted, about 1 minute.
8. Season with salt and pepper to taste before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a skillet over medium heat until heated through, or microwave for 2-3 minutes.
