Ingredients
12 oz ziti pasta
1 tbsp olive oil
3 cloves garlic, minced
1/2 tsp red pepper flakes
1/4 cup fresh lemon juice
1 tbsp lemon zest
2 cups ricotta cheese
1 cup grated Parmesan cheese
2 cups fresh spinach, chopped
1/2 cup mozzarella cheese, shredded
Salt, to taste
Black pepper, to taste
Fresh basil leaves, for garnish
Instructions
1. Preheat the oven to 375°F (190°C) and grease a 9x13 inch baking dish.
2. Cook the ziti pasta according to package instructions until al dente, drain, and set aside.
3. In a large skillet, heat olive oil over medium heat and sauté garlic and red pepper flakes until fragrant.
4. Add lemon juice and zest to the skillet, stirring to combine.
5. In a large bowl, mix ricotta cheese, Parmesan cheese, and the sautéed lemon mixture.
6. Season with salt and black pepper to taste.
7. Stir in chopped spinach until well combined.
8. Add cooked ziti to the ricotta mixture, gently tossing to coat the pasta evenly.
9. Transfer the pasta mixture to the prepared baking dish and sprinkle mozzarella cheese on top.
10. Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden brown.
11. Remove from the oven and let it cool for a few minutes before serving.
12. Garnish with fresh basil leaves before serving.
