Ingredients

4 boneless, skinless chicken breasts (about 6 oz each)
1/4 cup honey
1/4 cup Dijon mustard
2 tbsp olive oil
1 tbsp apple cider vinegar
2 cloves garlic, minced
1/2 tsp paprika
1/4 tsp salt
1/4 tsp black pepper
1/4 cup chicken broth
Fresh parsley, chopped (for garnish)

Instructions

1. In a small bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, minced garlic, paprika, salt, and black pepper to create the marinade.
2. Place chicken breasts in a shallow dish or zip-lock bag and pour the marinade over them. Let it marinate in the refrigerator for at least 30 minutes.
3. Heat a large skillet over medium heat and add chicken breasts, reserving marinade. Cook chicken for about 6-7 minutes on each side, or until fully cooked and golden brown.
4. Remove chicken from the skillet and set aside. Add the reserved marinade and chicken broth to the skillet and bring to a simmer, stirring frequently until the sauce thickens slightly.
5. Return chicken to the skillet, spooning the sauce over the breasts. Cook for an additional 2 minutes to meld flavors.
6. Garnish with fresh parsley before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.
