Zesty Herb Three-Bean Salad

Ingredients
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) garbanzo beans, drained and rinsed
1/2 cup red onion, finely chopped
1/2 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
1/4 cup olive oil
1/4 cup apple cider vinegar
1 tablespoon lemon juice
1 tablespoon lime juice
1 teaspoon Dijon mustard
1 teaspoon honey
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes
Instructions
1. In a large mixing bowl, combine the black beans, kidney beans, and garbanzo beans.
2. Add the chopped red onion, parsley, and cilantro to the beans and mix gently.
3. In a separate bowl, whisk together olive oil, apple cider vinegar, lemon juice, lime juice, Dijon mustard, honey, minced garlic, salt, black pepper, and red pepper flakes until well combined.
4. Pour the dressing over the bean mixture and toss to coat evenly.
5. Refrigerate the salad for at least 30 minutes before serving to allow flavors to meld. Serve chilled.
Storage
Store the salad in an airtight container in the refrigerator for up to 5 days.
Reheating
Since this salad is best served cold, there is no need to reheat it. Simply stir or shake to redistribute the dressing before serving.
