Zesty Herb Meatloaf

Ingredients
1 1/2 lbs ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
1/2 cup ketchup
1 tbsp Dijon mustard
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
1/4 cup grated Parmesan cheese
1 small onion, finely chopped
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large mixing bowl, combine ground beef, breadcrumbs, and milk.
3. Add the egg, parsley, basil, ketchup, Dijon mustard, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
4. Stir in the grated Parmesan cheese and finely chopped onion.
5. Transfer the mixture into a greased loaf pan and shape into a loaf.
6. Spread a thin layer of ketchup on top of the loaf.
7. Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (71°C).
8. Let the meatloaf rest for 10 minutes before slicing and serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat slices in the microwave for 1-2 minutes or in the oven at 350°F (175°C) for 10-15 minutes until heated through.
