Ingredients
2 lbs boneless skinless chicken breasts
1/2 cup Greek yogurt
1/4 cup mayonnaise
2 tbsp Dijon mustard
1 lemon, juiced
1 tsp lemon zest
1/4 cup fresh dill, chopped
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
2 stalks celery, finely chopped
1/2 red onion, finely chopped
Salt and pepper to taste
8 lettuce leaves (optional)
1 avocado, sliced (optional)
Instructions
1. Preheat grill or a grill pan over medium-high heat.
2. Season chicken breasts with salt and pepper, and grill for 5-7 minutes per side until cooked through and juices run clear.
3. Remove chicken from grill and let it cool slightly before dicing into small cubes.
4. In a large bowl, combine Greek yogurt, mayonnaise, Dijon mustard, lemon juice, lemon zest, dill, parsley, and basil.
5. Add diced chicken, celery, and red onion to the yogurt mixture and stir until well combined.
6. Season with additional salt and pepper to taste.
7. For serving, place a scoop of chicken salad onto a lettuce leaf or serve alongside sliced avocado if desired.
Storage
Store the chicken salad in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, gently warm the chicken salad in a skillet over low heat, stirring occasionally until warmed through. Alternatively, enjoy it cold straight from the refrigerator.
