Ingredients

1 lb Brussels sprouts, halved
2 tbsp olive oil
1 tsp garlic powder
1 lime, juiced and zested
1/2 tsp salt
1/4 tsp black pepper
1 tbsp fresh cilantro, chopped
1/4 cup grated Parmesan cheese

Instructions

1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a large bowl, toss halved Brussels sprouts with olive oil, garlic powder, lime juice, lime zest, salt, and black pepper until evenly coated.
3. Spread the Brussels sprouts on the prepared baking sheet in a single layer.
4. Roast in preheated oven for 25 minutes, flipping halfway through, until golden brown and crispy.
5. Remove from oven and sprinkle with chopped cilantro and grated Parmesan cheese before serving.

Storage

Store leftover Brussels sprouts in an airtight container in the refrigerator for up to 3 days.
