Zesty Dill Salmon Patties

Ingredients

1 lb fresh salmon fillets, skinless and chopped
1/2 cup breadcrumbs
1/4 cup finely chopped fresh dill
1/4 cup finely chopped green onions
1/4 cup mayonnaise
1 egg, beaten
1 tbsp lemon juice
1 tbsp Dijon mustard
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil for frying

Instructions

1. In a large bowl, combine the chopped salmon, breadcrumbs, dill, green onions, mayonnaise, beaten egg, lemon juice, Dijon mustard, salt, and black pepper. Mix until evenly incorporated.
2. Shape the mixture into 8 equal-sized patties, pressing gently to ensure they hold together.
3. Heat the olive oil in a non-stick skillet over medium heat.
4. Cook the patties for about 4-5 minutes on each side or until golden brown and cooked through.
5. Remove from heat and let cool slightly on a paper towel-lined plate.

Storage

Store leftover salmon patties in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place salmon patties in a preheated oven at 350°F for about 10 minutes or until warmed through.
