Zesty Creamy Corn Casserole

Ingredients

1 cup cornbread mix
2 cups fresh corn kernels
1 cup sour cream
1/2 cup shredded cheddar cheese
1/2 cup diced red bell pepper
1/4 cup chopped fresh cilantro
1/4 cup sliced green onions
2 tbsp unsalted butter
1 tbsp lime juice
1 tsp chili powder
1/2 tsp ground cumin
1/4 tsp salt
1/4 tsp pepper

Instructions

1. Preheat oven to 350°F (175°C) and grease a 9x13 inch baking dish.
2. In a large bowl, mix cornbread mix, corn kernels, sour cream, cheddar cheese, red bell pepper, cilantro, green onions, melted butter, lime juice, chili powder, cumin, salt, and pepper until well combined.
3. Pour the mixture into the prepared baking dish and spread evenly.
4. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the center is set.
5. Allow to cool for a few minutes before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 325°F (160°C) for about 10 minutes or until heated through.
