Zesty Corn and Black Bean Taco Soup

Ingredients
1 lb ground turkey
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (15 oz) diced tomatoes with green chilies
1 medium onion, diced
2 cloves garlic, minced
2 tbsp olive oil
2 cups chicken broth
1 tbsp chili powder
1 tsp cumin
1/2 tsp paprika
Salt to taste
1 lime, juiced
1/4 cup chopped cilantro
Instructions
1. In a large pot, heat olive oil over medium heat.
2. Add the diced onion and minced garlic, sauté until onion becomes translucent.
3. Add ground turkey, cook until browned, breaking it apart with a spatula.
4. Stir in chili powder, cumin, paprika, and salt, coating the meat evenly.
5. Pour in the chicken broth, black beans, corn, and diced tomatoes with green chilies.
6. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
7. Stir in lime juice and chopped cilantro just before serving.
Storage
Store leftover soup in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a pot over medium heat, stirring occasionally, until heated through, or in the microwave, covered, in 1-minute intervals.
