Zesty Citrus Garam Masala

Ingredients

2 tbsp coriander seeds
1 tbsp cumin seeds
1 tsp black peppercorns
1 tsp cardamom pods
1 tsp cloves
1 cinnamon stick (2-inch)
1/2 tsp grated nutmeg
1 tbsp dried orange peel
1 tsp fennel seeds

Instructions

1. In a dry skillet, lightly toast the coriander seeds, cumin seeds, black peppercorns, cardamom pods, cloves, cinnamon stick, and fennel seeds over medium heat until fragrant, about 2-3 minutes.
2. Let the spices cool completely.
3. Using a spice grinder or mortar and pestle, grind the cooled spices into a fine powder.
4. Add the grated nutmeg and dried orange peel to the spice mixture, and mix well to combine.
5. Store the Zesty Citrus Garam Masala in an airtight container in a cool, dark place.
