Zesty Broccoli Cheddar Casserole

Ingredients

4 cups broccoli florets
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon red pepper flakes
1 cup sharp cheddar cheese, shredded
1/2 cup sour cream
1/4 cup whole milk
1 teaspoon Dijon mustard
1 cup cracker crumbs (such as Ritz)
1 tablespoon butter, melted
Salt and pepper to taste

Instructions

1. Preheat oven to 375°F.
2. In a large bowl, toss broccoli florets with olive oil, garlic powder, red pepper flakes, salt, and pepper.
3. Transfer the broccoli to a baking dish and roast in the oven for 10 minutes to bring out the flavors.
4. In a mixing bowl, combine shredded cheddar cheese, sour cream, whole milk, and Dijon mustard.
5. Pour the cheese mixture over the roasted broccoli and mix until evenly coated.
6. In a small bowl, mix cracker crumbs with melted butter.
7. Sprinkle the buttered crumbs over the broccoli and cheese mixture.
8. Bake for 25-30 minutes or until the top is golden and bubbly.
9. Let it cool for a few minutes before serving.

Storage

Store the casserole in an airtight container in the refrigerator for up to 3 days.
