Zesty Black Bean Corn Soup

A vibrant black bean soup featuring zesty lime and sweet corn, perfect for a quick and delicious meal any day of the week.

Ingredients

2 tbsp olive oil
1 medium onion, chopped
3 cloves garlic, minced
1 red bell pepper, diced
1 tsp ground cumin
2 cans (15 oz each) black beans, drained and rinsed
1 cup vegetable broth
1 cup corn kernels
1 tsp chili powder
Salt and pepper to taste
Juice of 1 lime
1/4 cup cilantro, chopped

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, sauté until soft, about 5 minutes.
3. Stir in red bell pepper and cumin, cook for another 2 minutes.
4. Add black beans, vegetable broth, corn, chili powder, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for 15 minutes.
6. Stir in lime juice and cilantro before serving.

Storage

Refrigerate in an airtight container for up to 3 days.

Reheating

Reheat on the stove over medium heat until warmed through, or microwave for 2-3 minutes.
