Zesty Baked Salmon with Herb Crust

Ingredients

1.5 lbs salmon fillets
2 tbsp extra-virgin olive oil
3 cloves garlic, minced
1 tbsp lemon zest
1/2 cup panko breadcrumbs
1/4 cup fresh parsley, chopped
1 tsp dill weed
Salt and pepper to taste
1 lemon, sliced into rounds

Instructions

1. Preheat the oven to 375°F (190°C).
2. Place salmon fillets on a lined baking sheet, skin side down.
3. In a small bowl, mix olive oil, minced garlic, and lemon zest.
4. Brush the olive oil mixture over the top of the salmon.
5. In another bowl, combine panko breadcrumbs, chopped parsley, dill, salt, and pepper.
6. Press the breadcrumb mixture onto the salmon fillets evenly.
7. Place lemon slices on top of the crusted salmon.
8. Bake in the preheated oven for 20-25 minutes until the salmon is cooked through and flakes easily with a fork.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 300°F (150°C) for 10-15 minutes or until heated through.
